Description

Tender beef tips simmered in a savory mushroom gravy with herbs, onions, and garlic — a cozy, restaurant-quality dinner that’s simple enough for a weeknight and elegant enough for guests.

Ingredients

Beef and Gravy Ingredients

  • 1 ½ lbs beef tenderloin tips (or sirloin tips), cut into 1–2 inch pieces
  • 1 tbsp olive oil or butter
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 8 oz sliced cremini or button mushrooms
  • 2 tbsp flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme (or ½ tsp dried)
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • Optional: ¼ cup red wine
  • Optional garnish: chopped parsley

Instructions

  1. Heat and Sear Beef: Heat oil in a large skillet over medium-high heat. Sear beef tips 3–4 minutes, just until browned on all sides. Remove and set aside; they will finish cooking later in the gravy.
  2. Sauté Vegetables: In the same pan, add sliced onions and mushrooms. Cook for 6–8 minutes until softened and nicely browned, developing deep flavor.
  3. Add Garlic: Stir in minced garlic and cook for 1 minute until fragrant, being careful not to burn.
  4. Make Roux: Sprinkle flour over the vegetables and stir well to coat everything evenly, helping to thicken the gravy later.
  5. Add Liquids: Slowly pour in the beef broth and red wine if using, stirring constantly to create a smooth, lump-free gravy base.
  6. Season Gravy: Add Worcestershire sauce, fresh thyme, salt, and black pepper to the pan and stir to combine.
  7. Simmer with Beef: Return the seared beef tips to the pan. Reduce heat to low and simmer gently for 10–15 minutes until the beef is tender and the gravy thickens to your desired consistency.
  8. Final Adjustments and Garnish: Taste the gravy and adjust seasoning if needed. Garnish with chopped parsley before serving for a fresh finish.

Notes

  • For extra richness, stir in 2 tbsp sour cream or heavy cream at the end (dairy optional).
  • Don’t overcook tenderloin — simmer gently to keep it tender and juicy.
  • Swap beef tenderloin for sirloin or stew meat; increase simmer time if using tougher cuts.
  • Fantastic served over mashed potatoes, egg noodles, or rice for a complete meal.
