Ingredients

  • 2 tbsp olive oil

  • 1 large onion, diced

  • 1 green bell pepper, diced

  • 3 garlic cloves, minced

  • 2 lbs ground beef

  • 2 (15 oz) cans kidney beans, drained and rinsed

  • 1 (15 oz) can black beans, drained and rinsed

  • 2 (15 oz) cans diced tomatoes

  • 1 (6 oz) can tomato paste

  • 2 cups beef broth

  • 2 tbsp chili powder

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • ½ tsp cayenne pepper (optional, for heat)

  • 1 tsp salt

  • ½ tsp black pepper

Instructions

  • Heat olive oil in a large pot over medium heat.

  • Add onion, bell pepper, and garlic; sauté until softened.

  • Add ground beef and cook until browned, breaking it apart with a spoon.

  • Stir in beans, tomatoes, tomato paste, and beef broth.

  • Add chili powder, cumin, paprika, cayenne, salt, and pepper; mix well.

  • Bring to a boil, then reduce heat and simmer uncovered for 45–60 minutes, stirring occasionally.

  • Adjust seasoning and serve with toppings like shredded cheese, sour cream, or green onions
