Description

Baked Split Chicken is a simple and flavorful dish featuring bone-in, skin-on chicken breasts seasoned with herbs and roasted to juicy, golden perfection. It’s an easy weeknight meal that delivers crisp skin and tender meat every time.


Ingredients

  • 2 split chicken breasts (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Lemon wedges and fresh herbs, for serving (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper.
  2. Pat the chicken breasts dry with paper towels.
  3. In a small bowl, mix olive oil, garlic powder, onion powder, paprika, thyme, salt, and pepper.
  4. Rub the seasoning mixture all over the chicken breasts, making sure to get under the skin as well.
  5. Place the chicken skin-side up on the prepared baking sheet.
  6. Bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  7. Let rest for 5 minutes before serving. Serve with lemon wedges and herbs if desired.

  • Use a meat thermometer to ensure perfect doneness without overcooking.
  • Great paired with roasted vegetables or mashed potatoes.
