Description

“Enjoy a healthy and satisfying breakfast with this simple yet delicious Avocado Toast with Egg. Creamy mashed avocado spread over crispy toast, topped with a perfectly cooked egg—this dish is full of flavor and packed with nutrients. It’s the perfect way to start your day with a balance of protein, healthy fats, and fiber!”

Ingredients

  • 2 slices whole-grain bread (or your choice of bread)

  • 1 ripe avocado

  • 2 large eggs

  • 1 tbsp olive oil or butter (for frying the eggs)

  • Salt and pepper, to taste

  • Optional toppings: red pepper flakes, lemon juice, cherry tomatoes, microgreens, or fresh herbs

Instructions

  • Toast the Bread:

    • Toast the bread slices in a toaster or on a skillet until golden brown and crispy.

  • Prepare the Avocado:

    • While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl.

    • Mash the avocado with a fork until smooth, then season with salt and pepper to taste. You can add a squeeze of lemon juice for extra freshness, if desired.

  • Cook the Eggs:

    • Heat a skillet over medium heat and add olive oil or butter.

    • Crack the eggs into the skillet and cook them to your preferred doneness. For sunny-side-up, cook for 2-3 minutes, or for over-easy, flip after 2 minutes and cook for an additional minute.

    • Season with salt and pepper.

  • Assemble the Toast:

    • Spread the mashed avocado generously on the toasted bread slices.

    • Top each slice with a cooked egg.

  • Optional Toppings:

    • Add a pinch of red pepper flakes for some heat, a few cherry tomato slices for freshness, or sprinkle with fresh herbs or microgreens for added flavor and color.

  • Serve immediately and enjoy!

Notes

  • For a creamier avocado spread, you can add a little Greek yogurt or a dash of olive oil when mashing the avocado.

  • If you prefer a different type of egg, scrambled eggs or poached eggs also work wonderfully with avocado toast.

  • For a quick meal, you can prepare the avocado toast and eggs in a meal prep setting, storing the avocado separately to prevent browning.
