Ingredients

For the Stew:

  • 2 tablespoons olive oil or butter
  • 4 chicken drumsticks, skin removed
  • 4 boneless, skinless chicken thighs
  • ½ teaspoon salt
  • 1 tablespoon gluten-free flour
  • ¾ cup apple cider
  • 1¾ cups low-sodium chicken broth
  • ½ onion, thinly sliced
  • 1 lb parsnips, peeled and cut into 1” pieces

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Brown Chicken: Brown chicken in a pot with olive oil, season with salt, then set aside.
  3. Make Roux: Stir in flour to make a roux.
  4. Add Liquids: Whisk in cider and broth, simmer until slightly thickened.
  5. Add Ingredients: Add onion, parsnips, carrots, thyme, and raisins. Return chicken to the pot.
