Ingredients
For the Stew:
- 2 tablespoons olive oil or butter
- 4 chicken drumsticks, skin removed
- 4 boneless, skinless chicken thighs
- ½ teaspoon salt
- 1 tablespoon gluten-free flour
- ¾ cup apple cider
- 1¾ cups low-sodium chicken broth
- ½ onion, thinly sliced
- 1 lb parsnips, peeled and cut into 1” pieces
- 4 carrots, peeled and cut into 1” pieces

Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Brown Chicken: Brown chicken in a pot with olive oil, season with salt, then set aside.
- Make Roux: Stir in flour to make a roux.
- Add Liquids: Whisk in cider and broth, simmer until slightly thickened.
- Add Ingredients: Add onion, parsnips, carrots, thyme, and raisins. Return chicken to the pot.
- Bake: Cover and bake in the oven for 20-25 minutes.
- Serve: Let it cool slightly before serving.
