Ingredients

1 cup rolled oats

2 cups milk (dairy or non-dairy)

½ cup water

1 medium apple, grated

½ cup shredded carrots

2 tbsp maple syrup or honey

1 tsp cinnamon

¼ tsp nutmeg

¼ tsp ginger

1 tsp vanilla extract

Pinch of salt

2 tbsp raisins (optional)

2 tbsp chopped walnuts or pecans (optional, for topping)
- Extra apple slices or shredded carrot, for garnish
Instructions

In a medium saucepan, bring milk and water to a simmer over medium heat.

Stir in oats, grated apple, shredded carrots, cinnamon, nutmeg, ginger, vanilla, and salt.

Reduce heat to low and cook for 5–7 minutes, stirring occasionally, until oats are tender and creamy.

Stir in maple syrup (or honey) and raisins, if using.

Spoon into bowls and top with walnuts, apple slices, or extra carrots

For extra protein, add a scoop of Greek yogurt or nut butter on top.

Make it vegan by using plant-based milk and maple syrup.

Adjust sweetness to taste—bananas or dates also work as natural sweeteners.
