Description

Warm and cozy apple carrot cake oatmeal packed with shredded carrots, apples, and spices. A wholesome breakfast that tastes like dessert in a bowl


Ingredients

  • 1 cup rolled oats

  • 2 cups milk (dairy or non-dairy)

  • ½ cup water

  • 1 medium apple, grated

  • ½ cup shredded carrots

  • 2 tbsp maple syrup or honey

  • 1 tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ tsp ginger

  • 1 tsp vanilla extract

  • Pinch of salt

  • 2 tbsp raisins (optional)

  • 2 tbsp chopped walnuts or pecans (optional, for topping)

  • Extra apple slices or shredded carrot, for garnish

Instructions

  • In a medium saucepan, bring milk and water to a simmer over medium heat.

  • Stir in oats, grated apple, shredded carrots, cinnamon, nutmeg, ginger, vanilla, and salt.

  • Reduce heat to low and cook for 5–7 minutes, stirring occasionally, until oats are tender and creamy.

  • Stir in maple syrup (or honey) and raisins, if using.

  • Spoon into bowls and top with walnuts, apple slices, or extra carrots

Notes

  • For extra protein, add a scoop of Greek yogurt or nut butter on top.

  • Make it vegan by using plant-based milk and maple syrup.

  • Adjust sweetness to taste—bananas or dates also work as natural sweeteners.
