Description

A crisp, refreshing Apple Almond Crunch Salad that combines sweet, sliced apples, toasted almonds, and mixed greens tossed in a light, tangy dressing. Perfect for a quick, healthy lunch or side dish with a delightful balance of sweetness and crunch.

Ingredients

Salad

  • 4 cups mixed greens
  • 1 apple, sliced (green apples for tartness or red apples for sweetness)
  • 1/4 cup toasted almonds
  • 1/4 cup dried cranberries or raisins
  • 1/4 cup shredded cheddar or goat cheese (optional)

Dressing

  • 2 tbsp olive oil
  • 1 tbsp lemon juice or apple cider vinegar
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions

  1. Prepare the salad ingredients: Place 4 cups of mixed greens into a large bowl. Add the sliced apple, toasted almonds, and dried cranberries or raisins to the bowl. If using, sprinkle the shredded cheddar or goat cheese over the top.
  2. Make the dressing: In a small bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of lemon juice or apple cider vinegar, 1 teaspoon of honey, and a pinch of salt and pepper until well combined.
  3. Toss and serve: Pour the dressing over the salad ingredients and toss gently to evenly coat everything. Serve immediately for the freshest crunch and flavor.

Notes

  • Use green apples if you prefer a tart flavor or red apples for a sweeter salad.
  • Adding grilled chicken is a great way to boost the protein content, making it a more substantial meal.
