Description

Amish Doughnuts are light, fluffy, and tender fried treats made with a yeast-based dough. Known for their pillowy texture and golden crust, these doughnuts are a beloved traditional sweet enjoyed fresh and warm.


Ingredients

  • 2 cups whole milk, warmed
  • 1/2 cup granulated sugar
  • 1 tablespoon active dry yeast
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon salt
  • 6 to 7 cups all-purpose flour
  • Vegetable oil, for frying
  • 1 cup powdered sugar (for dusting or glaze)
  • 23 tablespoons milk or water (for glaze, optional)
  • 1/2 teaspoon vanilla extract (for glaze, optional)

Instructions

  1. In a large mixing bowl, combine warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  2. Beat in eggs, melted butter, and salt.
  3. Gradually add flour, one cup at a time, until a soft dough forms. Knead for 8–10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours or until doubled in size.
  5. Punch down the dough and roll out on a floured surface to about 1/2-inch thickness. Cut out doughnuts using a doughnut cutter or two round cutters.
  6. Place doughnuts on a lightly floured baking sheet. Cover and let rise for 30–45 minutes until puffy.
  7. Heat oil in a deep fryer or large heavy pot to 350°F (175°C).
  8. Fry doughnuts in batches for about 1–2 minutes per side, until golden brown. Remove and drain on paper towels.
  9. Dust with powdered sugar or dip in glaze made from powdered sugar, milk, and vanilla.
  10. Serve warm for best taste and texture.

  • Make sure the oil temperature stays consistent for even frying.
  • Dough can be made the night before and refrigerated before the first rise.
  • For a cinnamon-sugar coating, roll warm doughnuts in a mixture of sugar and cinnamon.
