Description
Air Fryer Blueberry Chimichangas are a lightened-up dessert featuring sweet blueberry filling wrapped in a crispy tortilla shell, cooked to golden perfection in the air fryer.
Ingredients
- 1 cup fresh or frozen blueberries
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 4 small flour tortillas
- 2 tablespoons cream cheese (optional)
- 1 tablespoon butter, melted
- 1 tablespoon cinnamon sugar (for topping)
Instructions
- In a small saucepan over medium heat, combine blueberries, sugar, cinnamon, and lemon juice. Cook for 5–7 minutes, stirring occasionally, until the mixture becomes syrupy and slightly thickened. Let it cool.
- Lay out the tortillas and optionally spread a thin layer of cream cheese on each one.
- Spoon the blueberry mixture evenly into the center of each tortilla.
- Fold in the sides and roll up like a burrito to seal.
- Brush the outsides of each chimichanga with melted butter.
- Place them seam-side down in the air fryer basket.
- Air fry at 375°F (190°C) for 6–8 minutes, flipping halfway through, until golden and crisp.
- Immediately sprinkle with cinnamon sugar after air frying.
- Serve warm, optionally with whipped cream or vanilla ice cream.
Notes
- Use frozen blueberries directly without thawing—just cook a little longer.
- Seal chimichangas tightly to prevent unrolling.
- You can make them ahead and store in the fridge before air frying.
