Ingredients
2 large eggs
1 tablespoon neutral oil or ghee
Splash of lukewarm water
Salt and black pepper, to taste
Fresh herbs like chives (optional)
Instructions
- Heat an 8-inch skillet over high heat until very hot.
- Whisk eggs with a splash of lukewarm water until frothy and bubbly.
- Add oil or ghee to the skillet and swirl to coat the bottom evenly.
- Pour in the eggs and immediately begin gently swirling cooked edges to the center using a silicone spatula, tilting the pan to allow uncooked egg to flow outward.
- Continue for 40 seconds, then remove from heat. Optionally, cover with a lid to let steam for extra softness.
- Season with salt, pepper, and fresh herbs. Serve immediately.
Notes
- Use a well-seasoned skillet like cast iron or carbon steel for better results.
- Add cheese or spices for extra flavor just before serving.
- Stop cooking at 30 seconds for extra soft eggs.
